Frequently considered to be the best for flavor and texture, which is one of the reasons why it is often canned, sockeye is relatively low in fat with flesh carrying a fluorescent orange tinge.

To defrost this fish we recommend taking the fish out of the cryovac pouch and placing it in a plastic container in the refrigerator for 6-8 hours before you are going to use it. If you have to rapidly defrost the fish in its original packaging only do so under cold running water, never warm or hot - it will ruin the fish and can create a food safety hazard.
Chef Adam Cooking Tip:
Cook like any other Salmon but be sure to add a little extra fat because this Wild variety is a "swimmer" and it tends to be a little less fatty and it needs a bump of extra olive oil or Bacon - who doesn't love some bacon....
