Sourced from Our Partners in Alaska or From Halifax, Nova Scotia,  We Have Been Buying from The Same Fisherman for 20 Years. Our Wild Caught Halibut Fish Are Flown in Twice Weekly from Dock to Door. During the summer months, the fish are coming from Alaska when their season is in full swing. From October to April the fresh halibut fillets are primarily sourced from Maine through Eastern Canada, primarily Nova Scotia, and the icy cold waters.

- It is truly a majestic fish and highly sought after because of its mild flavor and beautiful plate appearance. The species can reach tremendous sizes up to 1000 lbs. We tend to stick with the fish that can fit on our cutting tables of around 50 to 70 lbs. This too is one of our top picks.

To defrost this fish we recommend taking the fish out of the cryovac pouch and placing it in a plastic container in the refrigerator for 6-8 hours before you are going to use it.  If you have to rapidly defrost the fish in its original packaging only do so under cold running water, never warm or hot - it will ruin the fish and can create a food safety hazard. 

Chef Adam Cooking Tip:

Cook like any other Salmon but be sure to add a little extra fat because this Wild variety is a "swimmer" and it tends to be a little less fatty and it needs a bump of extra olive oil or Bacon - who doesn't love some bacon....

This is a funny fish....as the name implies one would think it is in the sole family it is not. It is a Pleuronectidae, also known as right-eye flounders, are a family of flounders. They are called "right-eye flounders" because most species lie on the sea bottom on their left sides, with both eyes on their right sides. The Paralichthyidae is the opposite, with their eyes on the left side. A small number of species in Pleuronectidae can also have their eyes on the left side, notably the members of the genus Platichthys.

Our fish comes from the most productive fish grounds in North America off the Georges Banks fishing area.  It comes in from our vendors all throughout New England primarily from New Bedford, Massachusetts. 

Hi, Chef Adam here - Am I going crazy here with the semantics? - Not really, I am trying to educate everyone about the differences between all the great variety we have and this question comes up all the time. what is the difference between Lemon Sole and Flounder - Actually Nothing?  The Commercial industry started calling 6-8oz pieces of "Flounder" Lemon Sole to segregate for special buyers.  They would call the 4/6 ounce pieces either just Flounder or Large Mix. At the end of the day, it is all just nice Flounder from the best fishing grounds in the world.

Hi, Chef Adam here - Am I going crazy here with the semantics? - Not really, I am trying to educate everyone about the differences between all the great variety we have and this question comes up all the time. what is the difference between Lemon Sole and Flounder - Actually Nothing?  The Commercial industry started calling 6-8oz pieces of "Flounder" Lemon Sole to segregate for special buyers.  They would call the 4/6 ounce pieces either just Flounder or Large Mix. At the end of the day, it is all just nice Flounder from the best fishing grounds in the world.

Haddock is the fish lover's fish - we love this fish because it is the ultimate white flakey fish.  All throughout New England, this is used for Fish and Chips and great fish stews!  We like this fresh Haddock fillet so much because it holds up great in so many cooking applications and has a fantastic clean taste. Fluke sushi, also known as Hirame in Japanese, is very popular in sushi restaurants, especially in the Northeast where it's also a targeted game fish. Fluke has beautiful white meat. The top side fillet has a translucent look, in contrast to the bottom fillet.

What we like about this fish is that it is truly a day-boat caught species. We have been buying this fish from the same fishing families for over two decades. The boat goes out in the morning and returns at night with some of the freshest fish in the land. If you desire to take a stab at making some sashimi at home you can rest assured this fish is seriously fresh.     Sourced from Our Partners in Alaska or From Halifax, Nova Scotia,  We Have Been Buying from The Same Fisherman for 20 Years. Our Wild Caught Halibut Fish Are Flown in Twice Weekly from Dock to Door. During the summer months, the fish are coming from Alaska when their season is in full swing. From October to April the fresh halibut fillets are primarily sourced from Maine through Eastern Canada, primarily Nova Scotia, and the icy cold waters.

    - It is truly a majestic fish and highly sought after because of its mild flavor and beautiful plate appearance. The species can reach tremendous sizes up to 1000 lbs. We tend to stick with the fish that can fit on our cutting tables of around 50 to 70 lbs. This too is one of our top picks.
