Hands-down Skate is the fishmonger's fish! We love Skate and so will YOU!: tender, firm, and delicate without being fragile like flounder. When cooking the fillets of skate, the grooves of the flesh become more pronounced and tear away sliver by sliver to make for a great experience. They get super crispy if you saute them just right - this is the perfect fish for your cast iron skillet.
You can poach the fillets in wine and stock or brown them, lightly dredged in flour, in a hot pan with butter. To augment a traditional caper, brown butter sauce, I like to add tomatoes and shallots and mix it with olive oil for a richer flavor.
