 When two fantastic flavors collide you come up with a true taste sensation.  The Umami from the smoked salmon and the cool flavors from the Boursin garlic cheese make this a perfect balance of yin and yang. We are using cold smoked Atlantic nova salmon from our friends at Acme smoked fish. The smoked salmon is very mild and does not overpower the dumpling.  We pair this with our housemade Yogurt dill sauce for dipping. I like to call this the perfect breakfast or brunch dumpling!

The perfect balance of flavors comes alive in the pocket of joy. Chef Adam is moving into more traditional flavors and is diving into his passion for Asian cuisine.  This Gyoza has a great balance of sweet and savory from the leek that is sauteed to give the Gyoza balance and stability, and the Shiitake that imparts an Umami that is second to none.

The team has dubbed this dumpling his best creation to date! What makes this a super fun night are the sauces he created to go so well with this dish.  The Sauce trifecta as he likes to call them.

Our new dumpling sauce is very traditionally made with very special black vinegar that is aged from 8 to 20 years. It is super mellow and delicious. 

The second sauce is our Scallion Ginger Sauce - this has a great balance of two great Asian flavors that elevate all of our dumplings and it is also great when making a fast pasta or marinade for your favorite fish.

Lastly, all the rage lately has been Chili Crisp - and we think our version with the crispy shallots makes for an amazing taste sensation.

Chef Adam and the culinary team are back at it creating magic! This time we are taking you on a journey dating back 600 years to the Ming Dynasty and the capital city of Beijing. It was considered an honor then as it is today to make this timeless dish for the Emperor or President - Peking Duck! It takes days of precision and care to prepare!

The Pekin Duck is a white feathered breed that is very mild and highly sought after. We are extremely lucky to be close to one of the most prestigious Duck Farms in the entire US called Crescent Duck Farms. They have been around for over 100 years and are a global producer of what is said to be some of the finest ducks money can buy. 

We are making a southern Cantonese-style duck as compared to a Beijing-style duck. There is a major difference between the two cooking methods - both are great, but here is the difference - the Cantonese style is closed oven, where the ducks are stuffed with citrus and aromatics and slow roasted - finished with an oil bath to crisp the skin. We do not do this - we use convection to get the same effect.  Beijing style is like you see in Chinatowns all over the world, hanging ducks over an open flame. Chef Adam likes the effect of stuffing the bird and the extra flavor.

We then pull the meat and create a soft delicate dumpling that we pair with our scallion ginger sauce and Hoisin BBq sauce for the ultimate bite!!

Beef

The team has dubbed this their favorite dumpling creation to date, even more than the new Chicken Pork which held the title for almost 1 month!  So what is Bulgogi? It is a fancy word for thinly sliced BBQ'ed beef in the Korean style.  It is hot, sweet, tangy, and super delicious.  As Chef Adam likes to say, "The Sauce is the Boss" on this dish. It has been served at many of our functions and people seem to go wild for this dish - you can be the judge for yourself.  

The dumpling is made with super high-quality Pat Lafrieda boneless Shortribs - check out the pics below, from raw to cooked - yum! - they are gorgeous! We sear them crispy and then braise for 7 hours till fork tender and combine with simple natural ingredients like napa cabbage, leeks, and aromatics to make a fantastic taste sensation. 

Comes with a 4 oz Korean BBQ Sauce  - this is the real crowd-pleaser!!

We are so close to Philadelphia that we always wanted to pay homage to our friends down south - this Gyoza does just that. It is Chef Adam's take on the best of Pat's and Gino's - we love them both, and we hope you do as well.

We have gone to our very close friends in the Hunts Point Meat Market in New York City which is world-famous for supplying the best restaurants with the best quality meat. This meat is sourced from the best ranches of only Grass-Fed American Wagyu beef. For our Gyoza's we are using a hand-selected Brisket blend which has a great depth of flavor and complexity!  Each package comes with Kraft Cheez Whiz for dipping - an American classic!

We take this Gyoza one step further and add a generous portion of 2 hour caramelized onions to the mix - you would think we add sugar but not one ounce goes into the recipe - we have a sweet and savory delicious blend. Enjoy as a meal or appy!

 Plant-based is all the rage so I figured I should jump into the deep end of the pool!  This gyoza packs a serious punch that is an exciting taste sensation.  We use tri-color Quinoa and tender baby kale and season this mixture with the most incredible Khao Soi Curry Sauce from our Friends at Thaimee Love, located in Soho, NYC. Originally from Chiang Mai, Thailand, Hong Thaimee is a chef, entrepreneur, and philanthropist who has served as a global ambassador for Thai cuisine and culture for nearly a decade. 

She used her tenacity to secure cooking jobs at Jean-Georges Vongerichten’s acclaimed Spice Market and Perry Street restaurants, where she spent several years mastering classic technique. 

In 2012, Hong left Jean-Georges to open Ngam in the East Village. At Ngam, Hong showcased the flavors of her childhood—vibrant curries, spice blends, and herbs—in novel dishes created for a New York audience. Chef Hong’s distinct “modern Thai comfort food” quickly caught on; the restaurant was named Best Thai Food in NYC by The Village Voice in 2013; The New York Times declared Ngam serves, “…mighty Thai flavors that seize you by the throat”; and The New Yorker raved, “So much love in the air it’s hard to resist, and…it’s made its way into the food.” Hong went on to open Thaimee Box and Thaimee Magic, fast-casual concepts serving her signature style of Thai cooking. In 2015, she published her first cookbook “True Thai” (Rizzoli), displaying her vivacious personality, skill, and passion for the unique flavors of her homeland. Chef Hong can now be found at Thaimee Love her newest restaurant located at 116 W. Houston St. in NYC where she creates Magic on a nightly basis!

We are pleased to announce this alliance between Chef Adam & Chef Hong, they have become good friends and we are proud to be able to bring this collaboration to the world...we hope you enjoy it as much as we enjoyed making it.
