Sourced from Our Partners in Alaska or From Halifax, Nova Scotia,  We Have Been Buying from The Same Fisherman for 20 Years. Our Wild Caught Halibut Fish Are Flown in Twice Weekly from Dock to Door. During the summer months, the fish are coming from Alaska when their season is in full swing. From October to April the fresh halibut fillets are primarily sourced from Maine through Eastern Canada, primarily Nova Scotia, and the icy cold waters.

- It is truly a majestic fish and highly sought after because of its mild flavor and beautiful plate appearance. The species can reach tremendous sizes up to 1000 lbs. We tend to stick with the fish that can fit on our cutting tables of around 50 to 70 lbs. This too is one of our top picks.

                One of the most popular cuts in Argentina, Uruguay, and France… as well as that of our butchers. It offers the best Taste/Value out there. It's exceptionally tender, marbled, and rich in flavor.
