Mahi-mahi are highly sought for sport fishing and commercial purposes. Sport fishermen seek them due to their beauty, size, food quality, and healthy population. Mahi-mahi can be found in the Caribbean Sea, on the west coast of North and South America, the Pacific coast of Costa Rica, the Gulf of Mexico, the Atlantic coast of Florida and West Africa, Indian Ocean, Bay of Bengal, the South China Sea and Southeast Asia, Hawaii, Tahiti, and many other places worldwide.
The meat quality is firm, mild and extremely delicious, and very versatile when it comes to cooking. It is best on a grill or heavy cast iron pan to achieve a great sear with simple compound butter.
To defrost this fish we recommend taking the fish out of the cryovac pouch and placing it in a plastic container in the refrigerator for 6-8 hours before you are going to use it. If you have to rapidly defrost the fish in its original packaging only do so under cold running water, never warm or hot - it will ruin the fish and can create a food safety hazard.Â
