grilled lemon-butter salmon

 - 4 salmon fillets
 - 1 TBL olive oil
 - salt and pepper
 Lemon Garlic Butter:
 - ½ cup butter - at room temperature
 - 2 tsp finely chopped herbs
 - 2 tsp minced garlic
 - zest of 1 lemon - about 1/2 tsp                                                       


- Combine softened butter, herbs, garlic, lemon zest, and salt. Mash with a fork till combined.
 - Pat the salmon dry with a paper towel, then drizzle with olive oil (rub all over with your fingertips) and season generously with salt and pepper.
 - Grill salmon over medium heat for about 8 minutes, flip and grill 4-6 minutes longer. Fish is finished when it reaches 165 degrees F. internally.
 - Remove salmon from heat and immediately top with a scoop of lemon garlic butter and serve as the butter melts. Enjoy!
