Chef Adam’s Simple Lemon Butter Iceland Cod
Sometimes the best seafood recipes are the simplest. This is one of my favorite ways to prepare Iceland cod because it lets the fish speak for itself.
Ingredients

2 Iceland Cod Fillets

2 tbsp olive oil
-
3 tbsp butter
-
2 garlic cloves, sliced
-
Juice of 1 fresh lemon
-
Sea salt and cracked black pepper
-
Fresh parsley for garnish
Instructions

Pat the cod dry very well with paper towels. Season generously with sea salt and cracked pepper.

Heat olive oil in a nonstick or stainless steel pan over medium-high heat.

Place the cod presentation side down and cook for about 4–5 minutes until golden.

Carefully flip the fish and lower the heat slightly.

Add butter and sliced garlic to the pan. As the butter melts, spoon it continuously over the cod for another 3–4 minutes.

Finish with fresh lemon juice and parsley.
Chef Adam Tip:
Do not overcook cod. The magic happens when the fish is just beginning to flake and still stays juicy in the center.
