LOW-CARB LOBSTER ROLL WRAPS

INGREDIENTS:

  • Β½ poundΒ steamed lobster meat, coarsely chopped.
  • 3 tablespoonsΒ of Greek yogurt.
  • 1 tablespoon fresh parsley, chopped.
  • 1 lemon, juiced and zested.
  • A pinchΒ of sea salt and freshly ground pepper.
  • Butter lettuce leaves,Β whole.
  • ΒΌ cup light mayonnaise.
  • β…“ cup celery, diced.
  • 1 tablespoonΒ fresh chives, chopped.
  • ΒΌ teaspoonΒ paprika.
  • A splashΒ of hot sauce (optional).

DIRECTIONS:

Put lobster meat in a medium bowl, then add the remaining ingredients and stir gently until combined.Β Using a tablespoon, spoon the mixture onto the lettuce.

 Serve immediately and enjoy 🦞
