The taste of most Grouper is similar, with slight differences in flavor and texture, depending on size, species, and location of harvest. Red Grouper is sweeter and milder than Black Grouper. They both have a very firm texture, heavy flake, and good moisture retention. Grouper are usually caught by hook and line or longline fisheries.
Our Grouper portions are Skin off and 8-10 oz - a very generous portion of firm white flakey meat. They ship frozen in skin-tight cryovac pouches.
To defrost this fish we recommend taking the fish out of the cryovac pouch and placing it in a plastic container in the refrigerator for 6-8 hours before you are going to use it. If you have to rapidly defrost the fish in its original packaging only do so under cold running water, never warm or hot - it will ruin the fish and can create a food safety hazard.Â
