Coho is called silver salmon because of their radiant, silvery skin; it's perhaps not obvious when you're looking at a coho on its own — but when you set all the species of wild Alaskan salmon side by side, the coho shines bright like a diamond.
Coho salmon fillets have an excellent mild salmon flavor. The flesh of the wild-caught Coho salmon appears to be soft but is actually firm after it is cooked. Its reddish-orange meat is very fatty and tends to flake well when cooked, giving it the most delicious texture and flavor.
This is the best time of year to explore eating salmon b/c we have so many different varieties....let your imagination and taste buds run wild.....
