I personally like to make a mix of brown sugar, dijon, and a touch of chili flake.
medium heat for 35 / 45 minutes - the last 15 minutes I open the foil to crisp things up If you do this on an ovenable serving tray and garnish with veg & starch around the fish it will look very festive when it is done. Happy Cooking - Chef Adam
