Inspired by Chef Adam’s love of dishes with 5 ingredients or less this is crown jewel of Maine’s oceans bounty. There are hundreds of variations and no wrong versions - be creative, and most of all keep it simple, and let the ingredients speak for themselves – This is the classic Maine Roll!

Step #1 – Lobster Prep
Take your fresh lobster meat and allow to strain and drain for 10 minutes before assembly in a strainer. If you freeze our fresh meat do this step the night before in the refrigerator not under cold water, it will be a better experience.
Step #2 – Lobster Warming
Heat large sauté pan over medium heat, add 2-3 TBL of Chive butter allow to warm up, 30 seconds – Add lobster meat and toss for 1 minute. (we are not cooking; the meat is cooked – we are warming)
Step #3 – Lobster Seasoning
Remove from the heat and add in the spice mix to taste, go slow (optional), add mayo at this point (optional – 2 TBL per lobster roll is your guide – I am a purist, I would split the batch and try both ways, some with, and some without). Reserve on the side.
Step #4 – Bun Toasting
Toasting of the buns, the most important step – with a brush paint all sides of the split top buns with the clarified chive butter, and brown off in your sauté pan. When the edges are nice and golden brown it is time to assemble your rolls.
Step #5 – Assembly
Stuff each toasted buttery New England Split top bun with your creation, stand back and wait for the cheers from the crowd. Serve with extra Clarified chive butter on the side!!
